Mix it Up!

Okay, so it has been a while and I’ve been cooking the same ol’ same ol’ trying to get my butt back into shape……BORING!  Luckily Mrs. McCameron stepped in and got Will and I out of our rut.  We are now the proud owners of a Vita-Mix and I am obsessed!  If you do not know, Vita-Mix is a special type of blender that can take whole fruits/vegetables and blend them to create smoothies.  You can also make salsas, doughs, cake mixes, ice creams, etc.  Below are two recipes that are fantastic.  The Green Smoothie is one that I make daily for breakfast and it helps me eat vegetables that I would normally stick my nose up to (and you don’t taste them at all!).  The ice cream recipe is from the demo at Whole Foods and it was delicious.  Enjoy!

 

The Green Breakfast Smoothie

  • 2-3 handfuls of green grapes
  • 1 pineapple wedge, w/ core 
  • 1 whole apple (seeds & skin)
  • 2 handfuls fresh spinach
  • 2 handfuls fresh kale
  • 1/4 orange, peeled but keep white pith
  • 1-2 carrots, cut into chunks
  • 4 pitted dates
  • 1 cup of ice

Preparation:

Place all ingredients into the Vita-Mixer in the order listed and secure the lid.  Select variable 1 and turn machine on.  Quickly increase to variable 10 and then switch to High.  Use tamper to press ingredients into the blades.  Blend for a minute or until you reach the desired consistency.  Drink up!

 

 

 

Chocolate Avocado Ice Cream

  • 1 cup of half and half  
  • 1 tsp vanilla
  • 2 oz. sugar in the raw (shot glass!)
  • 2 oz. Ghiradelli’s chocolate mocha
  • 1/2 of an avocado
  • 1 1/2 cups ice

Preparation:

Place all ingredients into the Vita-Mixer in the order listed and secure the lid.  Select variable 1 and turn machine on.  Quickly increase to variable 10 and then switch to High.  Use tamper to press ingredients into the blades and blend until 4 “pillows” form on top.  Do not over mix or melting will occur.
