I found this recipe on Weight Watchers website while I was searching for some slow cooker chicken recipes. If I can get my act together I am going to try this out tonight.
- 1 lb boneless/skinless chicken thighs or breasts, cut into bite size pieces
- 1 cup sliced mushrooms
- 1 green bell pepper cut into slices
- 1 cup chopped onions
- 1 clove garlic, minced
- 1 Tbsp canned tomato paste
- 14.5 oz can crushed tomatoes, fire roasted
- 1/4 cup dry red wine
- 3/4 tsp dried oregano
- 3/4 tsp salt, divided
- 1/4 tsp black pepper
Place chicken pieces in a 3-5 qt. slow cooker. Add mushrooms, green pepper, onions, garlic, tomato paste, tomatoes (with juice), wine, oregano, 1/2 tsp salt, and black pepper.
Cover and cook on high for 5-6 hours or on low for 6-8 hours. Taste and add remaining salt if needed. You can serve over whole wheat penne or angel hair.
