You HAVE to Eat These to be Healthy!


Kim R. brought this delicious dessert to a New Year’s Eve get together and they are were a hit.  So I come from the philosophy that as long as it has healthy ingredients, that I would normally not eat, then it is a “must eat” food.  For example, I hate cranberries but these cookies are delicious and I receive all of the amazing nutrients that cranberries offer by “forcing” myself to eat them.  The key is moderation and that could be hard to maintain with these bad boys.  Try them out and let me know what you think.


Kim’s Cranberry Cookies

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp. orange zest (She always adds more)
  • 2 tbsp. orange juice (She doesn’t always have OJ in the house, so she usually juices the orange that she zested, which turns out to be more than 2 tbsp…)
  • 1 tsp. vanilla
  • 2 1/2 cup flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cup chopped cranberries
  • 1/2 cup walnuts (optional.  She never adds walnuts, but adds 1 cup of white chocolate chips!)



Preheat Oven to 375°

1. Cream butter and sugars.  Beat in egg until well blended.  Mix in orange zest, juice and vanilla.
2. Mix dry ingredients, and then add to wet ingredients and mix well.
3. Mix in cranberries and nuts/chips.
4. Drop onto ungreased cookie sheets and cook for 12 minutes in 375° oven.
Once cookies have cooled, you can glaze them with the following.  The glaze adds a little more “orangeiness” but the cookies are just as good without the glaze!
1 tsp. orange zest
3 tbsp. orange juice
1 cup 10x sugar
1. Mix together until smooth.  Spread or drizzle over cooled cookies.
