I have found a new love and it happens to be my slow cooker!  Below are two great crockpot recipes that make life so much easier.  I made the taco recipe (found at grouprecipes) this past weekend for a family dinner and it was simple and inexpensive.  I made the buffalo chicken (found at allrecipes) the night before a tailgate and assembled the sandwiches the day of.  This was the easiest tailgate food I have ever prepared and it was devoured.  Enjoy!

Awesome Crockpot Chicken Tacos

  • 4 boneless skinless chicken breasts
  • 1 can Rotel with Green Chilis (I used the Mexican Rotel)
  • 1 packet of Taco Seasoning

 Extras

  • Slow Cooker Liners
  • Salsas
  • Shredded lettuce
  • Tortillas
  • Shredded Cheese
  • Onions
  • Guacamole

 

Preparation:

Mix taco seasoning and tomatoes together in a small bowl.  Spray slow cooker with cooking spray (I used slow cooker liners which makes clean-up so easy).  Put chicken in bottom of slow cooker and top with salsa mixture.  Cook on low 6-8 hours or on high for 4 hours.

Slow Cooker Buffalo Chicken Sandwiches

  • 4 boneless skinless chicken breasts
  • 1 (17.5 oz) bottle of buffalo wing sauce, divided (I used Texas Pete Wing Sauce)
  • 1/2 (1 oz) packet dry ranch salad dressing mix
  • 2 Tbsp butter
  • 6 hoagie rolls

 

Preparation:

Place chicken in slow cooker and pour 3/4 of wing sauce and all of ranch dressing mix over chicken.  Cover and cook on low for 6-7 hours.  Once cooked add butter and shred finely with two forks.  Place meat on rolls and top with remaining sauce.  (Add blue cheese crumbles if you like)
