This another recipe from Paula Deen’s “Quick & Easy Meals” magazine. I love biscuits and I love sweet potatoes so I am hoping they make a happy marriage!
Sweet Potato Biscuits
- 2 3/4 cups biscuit and baking mix
- 1/2 cup firmly packed brown sugar
- 1 cup drained and mashed canned sweet potatoes
- 1/4 cup whole buttermilk
- 2 Tbsp butter, softened
Preheat oven to 400°. Line baking sheets with parchment paper.
In a large bowl, combine baking mix and brown sugar. Add sweet potatoes, buttermilk, and butter, stirring until just combined.
Drop mixture by heaping tablespoonfuls onto prepared baking sheets. Bake for 12-15 minutes, or until golden brown. Serve immediately.
