Meaty Marinades

My life has been in the fast lane the past few weeks, but I am hoping it is starting to slow down.  When we have had time to cook we tried to be health conscious because I have been on hold for working out and Will is transforming for his new career….. Anyways we saw a great sale on chicken breasts at BiLo (sorry to all your Georgians but BiLo is awesome) and took advantage of the buy one pack get the second pack free!  We had to get creative to eat chicken every night but we did it!  Below are two amazing marinades that can be put on fish and chicken and we even divided the marinades and grilled squash and onions, DELICIOUS!  I hope you guys like it!

*the first marinade is from Everyday with Rachael Ray and the second is from Cooks.com. 

Bourbon-Apple Marinade

  • 1 cup bourbon
  • 1 cup unsweetened apple juice or cider
  • 1 tsp worcestershire sauce
  • 1 tsp vegetable oil
  • 1 tsp salt
  • 4 chicken breasts

 

Preparation:

Mix all ingredients in large ziplock and marinate meat for 1-8 hours. 

Herbed Lemon Marinade

  • 1/2 cup fresh squeezed lemon juice
  • 1/2 cup dry white wine
  • 1/2 cup olive oil
  • 1 Tbsp chopped fresh rosemary (or 1/2 tsp dried)
  • 1 Tbsp chopped fresh thyme (or 1/2 tsp dried)
  • 1 Tbsp chopped parsley
  • 1 tsp grated lemon rind
  • 3 cloves garlic, thinly sliced (I mince with hand grater)
  • salt and pepper

 

Preparation:

Mix all ingredients and marinate meat for 2 hours or overnight.

Tips:

We bought summer squash, zucchini, onions, etc. and would marinate the vegetables in half of the marinade and 2 chicken breasts in the other half.  We cooked the veggies in a grill wok (has holes all over it).  This is a very nutritious and filling meal!
