These two recipes are for all of you Tucker Tigers. Shirley graciously sent me the recipes for her wonderful cheese wafers and amazing chex mix. I can’t wait to try these out this weekend.
Shirley’s Cheese Wafers
- 2 cups shredded cheese
- 1/2 cup margarine (softened)
- 1 cup plain flour
- 1 tsp. salt
- 1/4 tsp. red pepper
- 3/4 cup finely chopped nuts (optional)
Combine cheese and margarine. Add flour, salt, pepper & nuts. Roll into 2 or 3 rolls and wrap in wax paper.
Chill at least 2 hours in fridge.
Slice and bake at 400 for 7-10 minutes (depending on crispness you desire).
Shirley’s Hot and Spicy Chex Mix
- 1 Family size box of Crispix (or 1 1/2 boxes of regular size)
- 2-3 TBLS worcestershire
- 1 stick of margarine
- 2 tsp seasoning salt
- 6 tsp tabasco sauce
- 1-2 cups peanuts
- 1-2 cups tiny pretzels
Heat oven to 250…..melt margarine in large, deep pan…..mix Worcestershire, salt and Tabasco into melted margarine……..add cereal, peanuts and pretzels and stir well until there is no liquid in bottom of pan…….bake for 1 hour……..stirring every 15 minutes!
